The AOC Cabardès is an amphitheater leaned against the Montagne Noire which dominates Carcassonne city. This wine appellation covers 450 hectares. The vines are oriented south, on a long slope irrigated by six rivers. The vineyard produces about 29 600 hectoliters of wine per year.
The Mediterranean climate characterize wines on this terroir, soils are composed of so-called Ventenac limestones and calcareous alveoline silts.
The wines of the Cabardès AOC are vinified from an association of Grenache, Syrah, Merlot and Cabernet-Sauvignon. They allow to develop wines that combine elegance of oceanic vineyards and fruit taste of sun wines. These wines are intense and taste rich with tannins that are present but are also very delicate.
The Minervois vineyard is one of the largest in Languedoc Roussillon. On nearly 15 000 ha of vines, 5 000 ha are destined for the production of AOC wines, the very wide palette of table wines, countries and grape varieties is complemented by three distinct AOCs: the AOC Minervois, 'AOC Minervois - The Livinière and the Muscat of Saint Jean de Minervois.
The AOC Corbières extends from Carcassonne city gates to Leucate and Narbonne ponds, from the foothills of the Pyrenees to the foot of the Montagne Noire, on an area of 11,800 hectares. It is the Languedoc appellation with the largest area. It produces about 550 000 hectoliters per year on very diversified soils: schist, sandstone, limestone, marls. The climate here is dominated by the Mediterranean influence, which is found in a typical vegetation of scrubland. The more western soils are subject to oceanic influences.Several grape varieties are used in the production of red and rosé wines. AOC Corbières: carignan, grenache noir, cinsault, syrah and mourvèdre. White wines come from Grenache Blanc and Maccabeu varieties.The red Corbières wines are fleshy, elegant and have good potential for keeping. They are also characterized by complex aromas of roasting, especially on the oriental terroirs which ensure a great ripeness to the grapes by the exceptional Mediterranean sunshine and the dry summers. The wines of the AOC Corbières declined in white are defined as ample and balanced, exotic fruits aromas. The rosés are light and fruity.
